10 Days Of Toast - Day 3 - Goat Cheese Toast

Welcome to day 3 of 10 Days of Toast! Today's toast is a mild, oniony goat cheese on toast with crisp radish. Its tart, sweet and buttery, and takes fifteen minutes to make.





I love goat cheese but enjoy it most in milder form when on toast. In this recipe, the goat cheese is beaten with plain cream cheese and a little bit of butter. This makes the cheese mix mild, creamy and so decadent. Sweet, roasted spring onions are added to the mix before being smothered on toasted sourdough bread, and topped off with crisp slices of radish and freshly cracked pepper. Yum!






This recipe will top around eight toasts so there will be leftovers that can be enjoyed within three days.


Prepare the spring onions by washing, then slicing each onion lengthwise in two. Drizzle with a little olive oil and season with salt and pepper before placing in the middle rack of an oven, for around ten minutes.


In the meantime, beat the cream cheese, goat cheese and butter in a stand mixer until fully combined. If you are doing this by hand, then let the cheese and butter get to room temperature first.


Next prepare the final bits - chop the chives finely, slice the radish into thin rounds and toast the bread.


When the onions have roasted, allow them to cool down before chopping them up and adding them to the cheese mix. Also add the chopped chives and stir until fully combined.


And for the final assembly - smother the goat cheese mix onto the toast, add the radish on top with freshly cracked pepper. Voila! How easy was that?






 


Creamy Goat Cheese & Roasted Spring Onion Toast With Radish



Prep Time: 5 minutes Cook Time: 10 minutes Total Time: 15 minutes Yield: 8 toasts



Ingredients


sourdough bread

130g goat cheese

100g cream cheese

30g butter

4 spring onions

1/2 tablespoon olive oil

salt & pepper to season

handful of chives

10 small radish

freshly cracked pepper to taste



Method


  1. Preheat the oven to 220C.

  2. Wash and slice the spring onions lengthwise in two. Place in a sheet pan with a drizzle of olive oil, salt and pepper and place into the middle of the oven for ten minutes.

  3. Place the goat cheese, cream cheese and butter in a stand mixer and beat until fully combined. If doing this by hand, allow the cheeses and butter to come to room temperature so it's easier to combine.

  4. Chop the chives finely and slice the radish in thin rounds.

  5. Toast the bread.

  6. Once the spring onions have roasted, let them cool down before chopping them up roughly.

  7. Add the chives and spring onions to the cheese mix and stir until combined.

  8. Once the toast is ready, smother the goat cheese mix onto the toast.

  9. FInish it off by adding the radish and freshly cracked pepper.
